Because every cocktail program is unique, we offer a variety of options to suit any need you may have. Our standard tiers have been developed over the course of several decades and capture most needs for most clients. If you are not most clients, we can create a custom consulting package for you. Cocktail Menu
Our menu program can work for new menus, revolving seasonal needs, or simply to elevate your existing menu. Creating a menu is a lot more than just handing over delicious drink recipes. When working on your menu, some things we consider are:
- BRAND INTEGRITY – Does your guests’ beverage experience meet the full brand expectations
- STEPS OF SERVICE – Are the SOS supporting the guest experience and can the cocktails easily be executed within those parameters
- NIGHTLY VOLUME – how many drinks – not just cocktails – are coming through your bar and what are your peak times
- DRINK SPEED – are your guests happy to wait for a craft cocktail or do they expect it under two minutes
- COST OPTIMIZATION – Do the products and pricing meet your budget goals
- PRODUCT SOURCING – What products are readily available or can be locally sourced for maximum cost efficiency
- COMPETITION – what are your competitors doing well and what gap do they not fill well
- DEMOGRAPHICS – Who is the average guest and what experience do they expect
- LOCATION – How do guests find you; why do they come back; what is the building accessibility like
- FOOD PAIRINGS – Do your cocktails pair easily with the most ordered appetizers
- BARTENDER EXPERTISE – what degree of difficulty can your existing staff execute with speed and precision
- INCLUSIVE EXPERIENCE – Are there beverage choices for a variety of dietary restrictions as well as designated drivers and non-drinkers

Menu + Training
Total bar experience is everything. The best menu in the world can’t withstand poor execution and inconsistency. In addition to a custom cocktail menu, our training program includes a hands-on training program to properly train all members of your staff on the new cocktail menu as well as to reform and roll out brand-specific steps of service. Available in this program are:
- Menu Creation – as noted above
- Personalized Diagnosis – Rob Floyd will personally work directly with your executive staff as well as conduct his own research to provide insights into how you can increase profit margins, guest satisfaction, employee retention, and local marketing opportunities
- On-Site Training – Either our on-site field experts will be on hand to personally train your staff, or your training can be upgraded for Rob to be there in person. Most installation training sessions take 3-5 days and are performed specifically with your bar team as well as your full front-of-house staff. If on-site training is not a possibility, we can provide VIRTUAL TRAINING PACKAGES upon request.
- Add-On Options
- Virtual Session(s) – If you’ve chosen to work with one of our field experts, you can add a virtual training session with Rob for your staff
- Recipe Video Database – your drink recipes can be filmed and stored virtually for recipe consistency and future staff training
- Training Manual –Â We will provide a customized training manual specific to your bar and it’s staff
- Classics Training – your bar staff can be properly trained on a host of classic cocktails to ensure that every guest experience is the same every time, no matter who is pouring
Seasonal Menu + Ongoing Training
Whether you are Michelin rated and looking to continually wow your guests or are a franchise program that needs to stay relevant in an over-saturated field, our most requested program also happens to be our most versatile. Your menu should be consistent, but it also needs to give guests a reason to come back. Your seasonal changes should be as refined and thought-out as your year-round staples. The nature of our industry continues to change at an unprecedented pace, making change an important part of your evolution and growth strategy. Creating symbiosis between continuous improvement, staff development, and market trends is an on-going effort. This program includes:
- Menu Creation – as noted above with the addition of 2-3 seasonal cocktails per quarter
- Training Installation – as noted above,
- On-Going Training – Includes two days of additional on-site training for the new menu items per quarter. We also use this time to reinforce and/or recalibrate steps of service to keep you running at maximum profit levels. This allows for hands-on time with new staff and gives us a chance to make small tweaks to your systems along the way. By helping you pivot in small ways every few months, you avoid long-term pitfalls and higher costs of rebuilding a program every few years. If on-site training is not a possibility, we can provide VIRTUAL TRAINING PACKAGES upon request.
